Author Interview: Elizabeth Henderson-Sharing The Harvest, A Citizen's Guide To Community Supported Agriculture


I had the opportunity to do an e-mail interview with Elizabeth Henderson, author of Sharing the Harvest, A Citizen's Guide To Community Service Agriculture.
Elizabeth started one of the first CSAs in 1988 and has been an organic farmer for 25 years.

Celeste: What are the health benefits of eating organic produce?

Elizabeth: There are clear health benefits to eating organically grown foods. Recent studies show that organic foods are much less likely to contain residues of chemical pesticides and are denser in essential vitamins, minerals and anti-oxidents. Interested readers can find the research studies on the Organic Center website – www.organiccenter.org.

The food from local, family-scale organic farms is fresher, richer in nutrients, and grown with greater care than the industrialized organic food shipped from California or elsewhere that appears in supermarkets. Knowing your farmer is the best way to assure the safety of your food.

Celeste: If a consumer can afford a limited number of organic items, what fruits and veggies should they start with?

Elizabeth:
The fruits and veggies with the highest level of chemical residues are peaches, strawberries, potatoes, lettuce, and spinach.


Celeste: How is the consumer helping the environment when buying organic?

Elizabeth: One’s own health is very important, but many people also want to contribute to reducing the likelihood of severe climate change. Eating organic:
  • Uses less energy.
  • Is good for the health of the planet.
  • Organic farms use 30 to 60% less energy than conventional farms.
  • By using cover crops and composting, organic farmers stock carbon in the soil, which helps to reduce the greenhouse gases in our atmosphere.
  • Buying from local farms cuts out the huge energy expenses for transporting food from distant places.
  • And when you buy directly from farms at farmers' markets, farm stands or through community supported agriculture, you cut out the middlemen and spend less money on your food.


Celeste: Do organic farmers use botanical pestides? Chemical residues on soil and crops? How about sodium nitrate?

Elizabeth:
Organic farmers sometimes use botanical pesticides, but these break down very quickly and have not been found to leave residues on the food. Organic food is not guaranteed to be free of all chemical residues since these are so pervasive in our environment that even mothers’ milk has residues. But organic farmers do not make things worse by using synthetic, toxic materials in growing food. Sodium nitrate is allowed in limited amounts in organic production. Personally, I have never used any in 27 years of organic farming.

Celeste: What are some important things a person needs to consider when choosing a CSA?

Elizabeth: Every CSA is different! You should select the CSA that offers what you are looking for. Some CSAs give you the opportunity to participate in growing the food or helping with distribution. Others simply deliver the food to a convenient place near where you live. Every CSA provides information about how your food is grown, shares recipes and gives you the chance to connect with a special piece of the earth and to share the risks and benefits with farmers whom you get to know.

Instead of a sandwich for lunch, eat beans and rice instead!



Spicy Black Beans

Ingredients:

How to Make:
  • Wash and sort dried beans. Place beans in bowl and cover with cold water plus a few extra inches (I use a large glass canister with cover on my counter). Soak beans for 8 hours.
  • Rinse beans again, discard water.
  • Put beans in crockpot and cover with fresh water plus a few extra inches of water.
  • Cook on LOW in crock for 10-11 hours or until beans are almost cooked.
  • Add Jalapeno peppers, tomatoes, onion, garlic cloves, and hot sauce and cook on HIGH for 1 1/2 hours longer, or until beans are tender.
  • Cook Lundberg rice. I replace the water with Beef Broth and this gives it a delicious taste. I like to make 8-10 servings of rice at a time to last throughout the week. Which is=2 cups of rice PLUS 4 cups of Beef Broth. Read directions on package. This rice takes atleast 50 minutes.

Jojoba Oil....liquid Gold

The Jojoba plant, pronounced ho-ho-bah, grows in the deserts of the Southwestern U.S. and Mexico. The plant produces a bean pod that when heated, secretes an oil. Actually, the oil is really a wax that becomes liquid at room temperature. The oil has a similar chemical make-up to the sebum oil that our skin produces naturally. Jojoba oil is one of the most easily absorbed oils found. It is biodegradale and non-toxic.

Because of the amazing properties of Jojoba, it is commonly used in skin care and hair products. In fact, Native Americans have used Jojoba oil for centuries for everything from a treatment for cuts, to sunburn relief.

The benefits of jojoba on the skin are numerous. It penetrates the skin rapidly and helps reduce water loss. It can clean clogged pores and restore the skin"s natural pH balance. It can help reduce wrinkles and minimize stretch marks. Jojoba is also very helpful in treating eczema, acne and many other skin problems. Jojoba is also very beneficial to hair. It is a natural moisturizer and conditioner because it's structure is so similar to the natural oil produced by the sebaceous glands in the scalp. Jojoba oil is able to penetrate the hair shaft to loosen and dissolve sebum build-up.

Just When You Thought It Was Safe To Eat Veggies By Amy Todisco

Most of us eat veggies because we know that they are healthy for us, and most of them really taste good. At least we thought they were healthy for us. Well, guess what? A recent University of Minnesota study published in the Journal of Environmental Quality found that antibiotics given to animals could end up in your veggies (gasp!).

Here's the problem:

Raw and/or lightly composted manure is often used as fertilizer on conventional farms. In contrast, manure used on organic farms must be composted or applied at least 90 days before harvest. No such requirements exist on conventional farms.

In the study, researchers found that corn; cabbage and green onions all absorbed the antibiotic, chlortetracycline from the manure fertilizer from pigs that were given the antibiotic. Chlortetracycline is a member of the tetracycline class of antibiotics used in human medicine. It's used to treat upper respiratory tract infections and other illnesses. When humans ingest antibiotics, especially unnecessary ones, it can make bacteria in the intestines become drug resistant. So, if you really needed that antibiotic at some point, it wouldn't be effective. Also, all antibiotics (as I understand it) kill off both the good and bad bacteria in our bodies leaving us more vulnerable to yeast infections, and other health issues. Beyond the immediate effects to our bodies, resistant bacteria created on a farm can contaminate air, water and soil, and travel significant distances.

Did you think antibiotics were just used to treat disease? I did. Apparently they are also fed to animals to make them grow faster and to compensate for overcrowded, unsanitary conditions on industrial scale farms. Not good for the animals, and not good for the consumers of those animals either.

Sadly consumers have no idea that they are consuming antibiotics in their food, there isn't any label requirement to reveal this information. I guess it's just like genetically engineered organisms, pesticides and other toxins in conventional food. That's not to say that it's impossible for antibiotics to appear in organic food too. It would seem unlikely though due to the requirement to compost the manure and apply it 90 days before harvest. But who knows? I'll continue to put my money on the organic stuff, what about you?

P.S. Occasionally I get asked what a person can do who cannot afford organic food. I usually suggest the following: (1) grow it yourself and freeze and can it for the winter. No land? Grow your own in a community garden plot, or in a neighbor's garden (get the soil tested for heavy metals. Call your local extension service for more information). Shop at local farmer's markets (fresher and usually more affordable). Join a community supported agriculture group (perhaps some farmers will barter your share of the harvest for something of value to them). I've heard that big box stores, like Costco's and Big Lots, carry some organic food. So, if you already shop there, choose the organic.

What to Look Out For

Since Teflon is only one variety of the non-stick chemical polytetrafluoroethylene (PTFE) used on cookware, watch out for “non-stick” labeling and ask if the coating is PTFE, even if it’s not Teflon. Calphalon, Scanpan and All Clad’s non-stick pans all use PTFE coatings.

Socially Conscious Investing And The Law Of Abundance

To know that one has a divine right to live in abundance means that one has a respect for nature's supply. Usually those who have become abundance conscious are also environmentally conscious. With respect to nature, many who have aligned themselves with universal laws strive to incorporate every aspect of their lives with abundance principles and concepts.

Consequently, as we become more conscious, we understand that money is a seed and in many ways we are responsible for where we plant our seeds. It is only wise to search for investment options that reinforce our beliefs and lifestyle.

Environmentally sound investments are more available this century than ever before. Such investments are known as Social Funds. Social Funds made its debut on Wall Street in the 1970's and has been soaring ever since. Years ago there was concern with these funds ability to be profitable. But with growing technological advancements and an ever increasing interest in the age of spiritual and environmental consciousness, socially conscious investing has proven to be not only profitable, but consciously probable.

From investing in solar panels to buying fuel efficient cars, living a green lifestyle has never been more attractive. Due to increasing popularity with becoming environmentally conscious, one is not labeled as a weird tree hugger with too much time on their hands. Instead, taking care of Mother Earth has been championed by influential celebrities, well respected politicians, and altruistic business leaders.

With the flow of wealth and consciousness beginning to take root and manifest in many, there has been a growing concern among conscious green and holistic individuals regarding the atrocities that may have been funded using their money. Individuals who once invested, through stocks and mutual funds, for example, in companies that have been responsible for damaging the earth (i.e. alcohol, tobacco) and abusing its people (cruel labor) are now conscious and aware of their prior investments. Those living a conscious, abundant, and green lifestyle are appalled that their dollars have contributed to situations that do not match their personal values.

According to The Social Investment Forum, an environmentally friendly organization made up of like minded investors, estimates that 10 percent of all investments are made with social values in mind. The forum also counts 151 socially responsible mutual funds with assets of more than $148 billion, up from $111 billion in 2001; an outstanding increase from its humble, yet highly influential beginnings.

Many who are environmentally and socially conscious gain the greatest return on their investments knowing that their money hasn't supported or had any type of horrid effect on nature, its people, and the community at large. These types of investors have seen the bigger picture and realize that the end results yield the highest return.

But still there are those individuals who don't quite yet feel comfortable trading their conventional stocks for socially conscious funds. One shouldn't beat themselves up. Start slowly. Begin to use the profits of conventional investing to further your socially conscious agenda. Use the funds to reinvest in your causes by:

1. Becoming a "Green" Angel Investor. By supporting start-up/ environmentally conscious organizations, in time nature and its people will begin to feel the positive trickle effects of these worthwhile efforts.

2. Independently invest in organizations that advocate social change. Become involved and rally around organizations which lobby and challenge congress to create "greener" laws.

3. Diversify your investment portfolio by having more Social Funds than Conventional Funds.

Spirituality and morally, if you take care of nature, nature will in turn take care of you. It is never too late to discover spiritual and universal laws that will guide you into creating the life that one desires. Trust in and align yourself with the Laws of Nature and you will soon see that living green will yield much green, spiritually and financially.

Olive Oil Skin Care Tricks For Healthy Skin

We all want to keep our skin looking and feeling as young and healthy as possible, right? Because the price of many skin care products is so high though, you might think you'll never be able to afford to give your skin the treatment it deserves. Stop thinking that way. You see, one of the best products you can use to improve and maintain your skin's health is also one of the simplest and least expensive. It's olive oil. Here's just a few olive oil skin care solutions you can start using today.

Many name-brand skin moisturizers are not only expensive, but contain many unnatural chemicals in them. If you want to save money and improve the suppleness and glow of your skin, replace these with a simple mixture of one cup virgin olive oil mixed with a half a cup of white vinegar and half a cup of water. You can use this as you would any moisturizing cream. You'll find that the olive oil immediately makes your skin feel softer, while the mild acidic properties of the vinegar help cleanse the skin.

You can use this on your face, your feet and your hands. (Don't get any in your eyes though.) If you use this as an overnight treatment, put cotton gloves or socks on to improve the results.

Keep in mind, olive oil is quite effective straight out of the bottle too, especially when rubbed on dry patches of skin. This is great for particular problem areas such as ankles, elbows and knees. Take your time to rub it gently into these areas, but don't overdo it as excessive rubbing could further crack and damage these dry spots before they have time to moisturize and heal.

Also, some people have reported excellent results in terms of improved skin glow just from adding a few tablespoons of quality olive oil to their bath. A few drops of your favorite oil, such as patchouli or sandalwood added to the mix makes for very relaxing tub time that will further improve your skin with no real effort at all.

There are other areas of your skin that often need extra care and attention and olive oil works wonders for these too. For example, chapped and dried lips will benefit very quickly from the application of a bit of oil. Furthermore, if you have a problem with dried and cracking fingernails, or flaking of the skin around your cuticles, you may find that soaking your fingers in a bowl of oil for fifteen or twenty minutes each day puts an end to these annoyances.

So before you go and shell out any more of your hard-earned cash for expensive skin care products, swing by your local grocery store or natural food store and pick up a bottle of inexpensive virgin olive oil instead. Not only will you save money, you may also discover this natural skin care solution is even more effective.
